"Transport" Bars


Cheryl’s Chewy Cookie

Servings: will vary by size – roughly two dozen. Can be made into either cookie or bar shape.

Wet Ingredients

  • ¾ cup canola oil
  • (can substitute oil with peanut butter, applesauce or pumpkin puree)
  • ⅔ cup brown sugar
  • ¼ cup granulated sugar
  • ¾ cup honey
  • 2 ¼ teaspoons vanilla
  • 1 egg

Dry Ingredients

  • 1 ¼ cup all purpose flour
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • 1 tablespoon cinnamon
  • ⅛ teaspoon cloves
  • ⅛ teaspoon nutmeg
  • ⅛ teaspoon ground ginger
  • ¼ teaspoon all spice

Stir In

  • 2 ¼ cups rolled oats
  • 1 cup of any combination of wheat germ, oat bran, ground flax seed
  • 1 ¼ cup any combination of nuts & seeds
  • ⅔ cup dried fruit
  • ⅔ cup chocolate chips
  •  
  1. Mix the wet ingredients well, scraping the bottom and sides of the bowl well. Mix dry ingredients separately and then add to the wet mixture, mixing thoroughly.
  2. Then stir in oats, wheat germ, oats, flax, nuts & seeds, dried fruits and chocolate chips.
  3. On a baking sheet lined with parchment paper, roll into med size balls (or small scoop) and press lightly onto sheets so that they are flattened slightly, leaving 1-2 inches between each.
  4. Bake at 325°F (in preheated oven) for 8-10 minutes.
